It starts with choosing the right resort. I recently visited multiple all-inclusive resorts across Riviera Maya and Cancun with AIC Hotels, including stays at two properties and site visits to several others.

Because I wasn’t selecting these resorts based on their gluten-free offerings, it reinforced what gluten-free dining is actually like across different properties; where resorts truly understand celiac needs, and where gaps still exist.

When it comes to being celiac-aware, I like to divide resorts into three categories:

  • the resort leads the conversation
  • you lead the conversation, and
  • there is no conversation

And within each of those categories there are resorts that have lots of options and resorts that have less options. The right fit for you might not be the one you think.
This is why choosing the right resort matters so much. Matching your expectations with what a resort can reasonably deliver is always my first priority.
