Instead, they are slow-fried cornmeal balls, which some people also call journey cakes. Slightly sweet, they are served at any time of the day as a snack or side dish. You can also sample dishes, such as whelk soup, crab backs ( which are crabmeat-stuffed shells), St. Maarten spare ribs, codfish fritters, conch and dumplings, and callaloo (a Caribbean vegetable dish).
